Description: Ruby-red, garnet, showing no browning. The nose is clean with ripe red-fruits, briar, spice and earth. The palate is full of red cherry, red and black plum, spice, earth, showing great tertiary development. A long, persistent finish with sweet, fine-grained tannins.
The fruit for this wine was hand-harvested then destemmed and wild-fermented, with maceration in stainless steel for approx three weeks, then aged for 20 months in French oak barriques (approx 20% new). Racked, blended and currently in closed stainless steel tank (not on ullage).
Minimum parcel 2500L, then sold in increments of 500L up to total of 8500L
