Grown on clay / lime stone. Hand-picked fruit was 100% de-stemmed then cold soaked before fermention on the skins for three weeks. Matured in two – five year old French oak barrels for 12 months.

Fermented in stainless, ~95% of this blend received oak influence for chips and the remaining ~5% from eight months on staves. Wine has completed MLF and is currently sitting on lees. Available as Cellar Bright.
